Phillip Moore, the owner of Distillery Botanica is a man to admire. Previously the owner of Australia's largest wholesale herb nursery, Phillip has combined his considerable distilling skills with his deep knowledge of plants and herbs. He takes years to develop many of his recipes and is unapologetic about creating products to satisfy his high standards - not to fulfil mass market ambitions. The results are exceptionally high quality products made using predominantly locally sourced ingredients. A true craftsman.
The distillery uses herbs grown on site and uses a rare carter head style still which passes the alcohol through wire baskets containing the botanicals, capturing their essence as purely as possible.
